Spicy Prawn Over Crispy Rice

Think crispy rice topped with tender shrimp/prawn, all dressed up in a fiery, savoury sauce that makes every bite unforgettable. It’s quick, delicious, and perfect for impressing your family and friends—or just treating yourself to a restaurant-quality meal at home.
Spicy Prawn over Crispy Rice:
Ingredients:
- 1 cup sushi rice (cooked and cooled)
- 300g prawns, peeled. You can also use salmon or tuna.
- 2 tbsp Old Bones Chilli Co. Smoked Garlic & Chilli Hot Sauce (Extra Hot)
- 2 tbsp soy sauce
- Mayonnaise
- Fresh lime juice to taste
- 1 avocado, thinly sliced (optional)
- Jalapeños for topping (Optional, just like the avocado, do your thing)
- 1 tbsp vegetable oil (for frying the rice)
- Fresh scallions and/or sesame seeds (for garnish)
Method:
- Prepare the crispy rice:
- Press the cooked sushi rice into a square or rectangular pan to about 1cm thickness. Chill in the fridge for 30 minutes to firm up.
- Cut the rice into small squares. Heat vegetable oil in a pan and fry each rice square on medium heat until golden and crispy (about 3-4 minutes per side). Set aside on a paper towel to drain.
- Cook the prawns:
- In a bowl, combine the Smoked Garlic & Chilli Hot Sauce (Extra Hot), mayonnaise, soy sauce and lime juice.
- Sauté the shrimp/prawns in a hot oiled pan for 1-2 minutes or until they’re cooked through and slightly caramelised.
- Once cooled down, toss prawns into the sauce until coated.
- Assemble:
- Top each crispy rice square with sliced avocado, the spicy prawn mixture and a slice of jalapeños for topping. Sprinkle with your garnish of choice for the perfect finishing touch.
